Baby Spinach/Shredded Cabbage Salad

I made this base salad last summer and the other day decided to change it up some for a few less points and still have great flavor.  It was GOOD, made 5 servings of 1 1/2-2 cups each, 5 PointsPlus per serving.

1 package of Baby Spinach Leaves
1 package of Shredded Cabbage
2 fresh corn on cob, cut off the cob
1/2 honeycrisp apple chopped
1 serving of left over chicken breast (about 3 oz) cut up
1/2 c chopped black walnuts toasted

Put all ingredients in nice size storage container that will seal tight.  Mix together.  I got 5 very plentiful servings from this.  I used Raspberry Spritzer salad dressing and a tiny bit of Light Ranch for some creaminess.  I also added 1/2 square of Laughing Cow Light Blue Cheese to it one day for variety.  The points for the salad don't include any dressings or extra cheese.

Spaghetti and Zucchini

Whole grain thin spaghetti
Zucchini and yellow squash
Two to three cans of your favorite kinds of tomatoes 

Cook spaghetti, drain and put back in pot.  Add a bit of olive oil to keep it from sticking together.  Microwave zucchini and yellow squash to the tenderness you like.  Drain off any water that might have accumulated.  Pour into spaghetti pot, add tomatoes.  Season to your taste with some salt, pepper, oregano, cumin, basil, celery salt, season salt, etc....
I let mine sit for a while to build the flavors I then put my serving in a bowl and added a wedge of laughing cow cheese, heat in microwave to melt the cheese, stir, enjoy.

Stacked up toast and banana

2 pieces of your favorite bread
1 banana
FitNutz Peanut Butter Spread
Lite Syrup

Toast bread and spritz with butter spray (just enough to add a bit of flavor).  Lay one piece on plate and cover with the peanut butter spread, thick/thin however you like.  Cut up banana over spread and put the other piece of toast on top.  Pour syrup over all, pop in microwave for about 45 seconds and let it warm everything up a bit.  Enjoy!!!!

Decadent Chocolate Snack

1 Weight Watcher Chocolate Creme Cake
1 cup frozen fruit of your choice  (I used pitted cherries, strawberries/bananas, and mixed berries)

Put frozen fruit in bowl and defrost, you can heat in microwave for couple minutes stirring frequently till you get it to the temperature you want, place the creme cake in the middle of the bowl and let it absord the juice a bit then crumble in into the mixture or eat it one luscious bite at a time.

This is one of those things that you can make to suit your own taste.  Warmer, colder doesn't matter on the fruit whatever floats you boat.  This is full of flavor and is best enjoyed when you can give your attention to the decadence of this snack.
